Infused Jello Gummies
Recipe
A simple, clean process for crafting your own island-made gummies.

Mix the cold water and corn syrup together. Stir until the mixture becomes clear again.

Sprinkle the gelatin into the mixture and let it bloom for 10–15 minutes, until fully hydrated and no dry clumps remain.

Once bloomed, stir in the Jello packet and place on a low to medium heat source, stirring occasionally until dissolved and combined.

After a few minutes on heat, stir in your lecithin and infused input of choice.

Once the mixture begins to simmer, remove from heat and allow the bubbles to settle. The froth will begin rising to the surface.
✨ Optional — Clarifying Carefully skim off the froth that rises to the top and discard. This may take a few minutes. Leaving it won't affect the taste — the gummies just look better without. -

Pour the clarified mixture into your gummy molds. Then choose your set method:
🕐 Room temperature: Allow to sit for 24 hours, then remove from mold and let gummies continue to "sweat" and firm up.
❄️ Refrigerator: Set in the fridge for 20 minutes, remove from mold, then allow to continue sweating at room temp.
⚠️ Keep clearly labeled — store away from children and pets!
- Start with one piece and wait 60–90 minutes before considering another.
- Store in an airtight container in the fridge or freezer.
- Use a green rubber band on the container as a universal "infused" at-a-glance signal.

Example: 2 tsp × 10 mg/tsp = 20 mg total
Step 2 — Per piece: (Total mg) ÷ (Number of pieces)
Example: 20 mg ÷ 20 pieces = 1 mg per gummy
