1Build the Base Mix
In a small glass or mason jar, combine your infused MCT oil, coconut milk, lemon juice, and liquid sweetener. Don't add the water yet — you want to emulsify the oil into the fat base before it gets diluted. This is the most important step: infused oil is precious and you don't want any of it floating on top of the glass or stuck to the sides of a blender.

2Froth or Shake to Emulsify
Use a handheld milk frother for 30 seconds until the mixture turns completely white and opaque — that's your sign the emulsion has formed. No frother? Put the lid on your mason jar and shake vigorously for 60 seconds. The fats in the coconut milk bind to the infused MCT oil, creating a stable suspension so the infusion stays evenly distributed in the drink rather than pooling on the surface.
The mixture should look like a thick, creamy citrus concentrate when it's properly emulsified — smooth, opaque, and pale yellow-white with no visible oil separation. -
3Pour Over Ice
Fill a separate tall glass with plenty of ice. Pour your creamy citrus-oil base over the ice. The cold helps lock the emulsion and keeps the mixture from separating while you top it off.

4Top Off and Serve
Slowly pour in your cold or sparkling water — sparkling adds a nice effervescence that complements the lemon. Stir gently with a straw or long spoon to incorporate. Don't over-stir or you'll break the emulsion foam on top.
💧 Swirl Before Every Few Sips Even a good emulsion can settle slightly if the drink sits for 20+ minutes. Give it a gentle swirl with your straw every few sips to keep the dose evenly distributed from first sip to last.
If you want a warm version, keep it under 180°F. High heat degrades the active compounds in your infusion and you'll lose potency and flavor.
If your infusion is particularly earthy, add a tiny pinch of sea salt or a muddled mint leaf. Both neutralize bitter chlorophyll notes without masking the lemon and coconut.
Agave or honey blend seamlessly into cold liquids. Granulated sugar won't fully dissolve in a cold drink and leaves a gritty texture — always go liquid for beverage recipes.
